Sausage made with a combination of low fat and fat pork, blood, cut into small pieces and seasoned with wine, salt, garlic and spices. It has the shape of a horseshoe, is cylindrical and it has a dark color. Its inner aspect consists of a mass of perfectly marbled appearance connected with an uneven distribution of pieces of meat and fat. Its length varies from 30 to 35 cm, a diameter of approximately 35 mm and weight 200 to 250 grs.
